Gluten Free Pumpkin Spice Muffins

About the Recipe

Ingredients

  • 1 c coconut flour

  • 1/2 c almond flour

  • 1 tsp baking powder

  • 1 tsp salt

  • 6 eggs

  • Cinnamon Bark oil

  • Nutmeg oil

  • 1 can Pumpkin

  • 1/2 c coconut oil

  • 1 tblsp vanilla

  • 1/8 c monk fruit or 10 d stevia

Preparation

  • Preheat oven to 375 F

  • Blend eggs, Pumpkin, vanilla, coconut oil (liquid coconut oil)

  • In a separate bowl mix all the dry ingredients and then add to wet ingredients and blend

  • Use a mixer

  • Add to muffin pans. I use muffin liners

  • Bake 15 - 25 minutes depending on your oven.

  • Makes 12 Muffins

  • Let cool and enjoy!
